This is one of the very best wines from Piedmont and therefore needs no food to impress. A large wine is in any case entitled to a large kitchen. With noble, festive dishes made from red meat but with a slight preference for game and lamb, but also with impressive cheeses from the region such as Fontina, Taleggio and Castelmagno.

climate

The climate of Barbaresco is classified as warm and temperate with regular and sometimes a lot of rainfall. Rain falls regularly even in the driest month. Both the mountains and the Mediterranean sea leave their mark on the region.

soil

West to South West oriented vineyard at 240-280m altitude. Dominant presence of limestone with an important share of clay. Just like Rio Sordo, one of the vineyards that gives Barbaresco its lofty status.

vinification

The grapes are hand picked and sorted with the greatest care. Long maceration for 18-20 days in stainless steel tanks. Fermentation with regular pumping of the juice under a temperature of 28-30°. Maturation occurs first for 12 months in Slavic oak barrels of 50 hectoliters. This is followed by a finish on smaller barriques of 20 hectoliters. 2 years after the harvest, the wine is bottled and stored for 7-8 months in the cellars before it appears on the market.
