Classic French cuisine, festive dishes such as roast pork with mustard, veal sweetbreads, roast beef, Chateaubriand and other fried or grilled red meats.

climate

Moulis enjoys a temperate maritime climate, shaped by the Atlantic Ocean. The warm Gulf Stream and the Gironde Estuary act as heat regulators and moderate the climate, while the proximity of the ocean ensures regular cloud cover and precipitation.

soil

The vineyards are located on the highest points of Moulis. The soil is predominantly clay (hence the abundance of Merlot) with numerous small pebbles and boulders in the topsoil, making the surface sparkle in the sun... Brillette!

vinification

Grapes are hand-picked and rigorously selected. The different plots undergo separate fermentation and malolactic fermentation to ensure the best possible maturation for each cuvée. Only then is the blend made, and the wines are further aged in a mix of new and used French oak (30 to 50% new, depending on the vintage).
