Deep, dark, ruby red color. Impressive nose with lots of dark fruits such as blackberries, cassis, myrtilles, plums and black cherries. The second noise reveals more spicy, more complex tones. We discover pepper, Provencal herbs, undergrowth, toasted notes and a touch of cocoa. Lush and generous in the mouth. Remarkably long and intense finish. The Châteauneuf of the Cevennes and showpiece of the winery.

The Cévennes have a Mediterranean climate (warm, dry summers and mild winters) that is strongly influenced in the intermediate seasons by cooling winds from the north and by rains and coolness coming from the Pyrenees. There can sometimes be a lot of precipitation in a short time. These temperature fluctuations (also during the night) guarantee a longer and better ripening of the grapes.

vinification

Manual picking. (Marselan is a cross between Cabernet Sauvignon and Grenache Noir) The grapes are pressed separately and fermented in concrete vats with maceration of the pellets at a constant temperature of 24-26°. Then the blend is made and the wine is further matured in large wooden barrels of 400 liters for 8 months. After bottling, the wine rests in the bottle for a while before being released on the market.
