Garrus is composed mainly of Grenache and Rolle (Vermentino). The grapes are harvested by hand in small crates to avoid oxidation. After a light pressing, fermentation takes place in 600-litre French oak barrels (demi-muids), with regular bâtonnage to give the wine body and complexity. After fermentation, the wine is aged on its fine lees for 11 months, which contributes to the creamy texture and depth of flavour.
