The grapes for the Garrus 2023 come from old Grenache and Rolle vineyards, with some vines up to 100 years old. The grapes are harvested manually in the morning in small crates to maintain freshness. After careful sorting, the grapes undergo a soft pressing at low temperatures to minimize oxidation. Fermentation takes place in new 600-liter French oak barrels (demi-muids), with the wine maturing for 11 months with regular bâtonnage to develop complexity and structure.
