The grapes for Les Clans come from old vineyards, aged between 50 and 80 years, located on chalky hillsides. The grapes are harvested by hand in small crates to prevent oxidation. After a soft pressing, the juice is cooled to preserve freshness. Fermentation takes place in 600-litre French oak barrels (demi-muids), where the wine is aged for 11 months with regular bâtonnage to develop complexity and structure.
