The family estate of Sylvain Bailly is located in Bué, in the heart of the Sancerre appellation. The first generation of winemakers dates back to the 18th century. The vineyards spread across the communes of Sancerre, Bué, Crézancy, and Montgny. 80% of the surface is planted with Sauvignon, on two different types of soil. "Caillottes", hard, stony limestone soil that gives the wines fruit and finesse, and "Terre Blanches", millions of years old limestone layers from the Kimmeridgian, containing a fair amount of clay and providing structure and richness to the wines. In 1955, the vineyard was expanded to the "Quincy" appellation. The vast plateau of Quincy has a unique character, consisting of limestone deposits from a formerly local lake. It is a mixture of shells and clay, with a top layer of sand and gravel brought in by the Cher River. The vineyards are cultivated with great respect for nature. Sustainability and efficiency are crucial for the Bailly family to ensure minimal environmental impact.
