On the nose, lively aromas of citrus, tropical fruits, orange blossom, white flowers, and a hint of spices. Extremely lively character with enviable mineral qualities. An exciting acidity characterizes the wines here, resulting in an unbelievably captivating style. On the palate, citrus, white fruits, stone fruits, and more exotic tones blend into a symphony of flavors and sensations that stimulate the palate challengingly and linger long after.
Its fresh, mineral, saline, and yet robust character make it a versatile companion to anything from the sea. Seafood, shellfish, ceviche, sushi, sashimi, and hearty white fish. Alternatively, you can also pair it with soft, young cheeses or summer salads.
- climate
-
The climate is the coolest in California. Moderate sunshine, cool maritime mist, and cooling winds from the ocean strongly influence the Mediterranean character, making Edna Valley a Cold Climate AVA uniquely suited for the production of high-quality white wines. (Very similar to Galicia, for example. Here in Edna Valley, Albariño finds its second natural home.)
- soil
-
Due to its proximity to the coast and surrounded by ancient volcanic mountains, Edna Valley boasts a highly privileged mineral-rich soil characterized by black humus, clay, oceanic sediments, and volcanic rocks.
- vinification
-
Two vineyards where the main difference lies in the pruning method. Handpicked and carefully selected. Cold fermentation in stainless steel tanks to preserve its lively, fresh, and mineral character as much as possible. After a good half-year of rest, the wine is then bottled. The wines are SIP certified (organic).
