This completely atypical Sauvignon Blanc is one of the only Cool Climate SBs in California and pairs wonderfully with clean flavors from the sea like oysters, sushi, sashimi, and ceviche, but also complements dishes like eel in green sauce, salads, grilled chicken, and asparagus.

The grapes come from 2 plots in the west of Edna Valley, right against the Ocean. They are manually harvested in the coolness of the night and early morning. Cold fermentation in stainless steel tanks follows, after which it rests for another thick half year before being bottled.
